Pizza from scratch, with a recipe in the comments

Mariana gave this pizza night its headline. She posted that she was glad to have married a man who could cook, then made her verdict on the from-scratch pizzas clear: delicious. Her two photos show a pepperoni pie on a pizza screen and a second red-sauced pizza with browned cheese and little green leaves.

The conversation quickly turned to the dough. When someone asked for the recipe, I explained that I had ordered type 00 flour online and was baking in my regular oven. I was already thinking about what a hotter pizza oven might do, but this dinner came out of the kitchen oven we had.

My process was about watching and feeling the dough: using the stand mixer, adding flour gradually, and looking for it to pull away from the bowl while staying tacky. I described an ideally overnight cold rise, time to warm back up, and a final rise after dividing it into balls. In another reply, I called it “a two day thing” and offered to show a friend the process and send some dough home with him.

That is what makes this pair of pizzas worth revisiting. Mariana captured dinner, and the comments captured the work behind it: flour choices, patience, a regular oven, and a recipe getting passed around.
