Marinara

A cheese-free pizza with tomatoes, thin garlic slices, basil and oregano.

Makes
1 × 12-inch pizza; extra sauce
Plan ahead
Prepared dough + 1–2 minutes bake

Ingredients

For one pizza and a sauce batch

  • 1 × 250 g dough ball
  • 400 g canned San Marzano tomatoes; use 5–6 tablespoons sauce
  • 1 garlic clove, very thinly sliced
  • About 8 basil leaves
  • ½ tablespoon dried oregano
  • Sea salt
  • Olive oil; flour for dusting

Let’s make it

  1. Cover the garlic slices with a tablespoon of oil. Soak basil in cold water with ½ teaspoon salt.

  2. Hand-crush tomatoes with a pinch of salt. Preheat the stone and stretch your dough.

  3. Spread 5–6 tablespoons tomato sauce over the base. Add garlic, drained basil, oregano and a swirl of oil.

  4. Bake, rotating, and serve. Keep the unused sauce separate from this pizza’s topping portion.
